1 oz. fresh lemon juice
¾ oz. simple syrup (equal parts white sugar to water)
1 egg white (if using pasteurized egg whites = ½ ounce)

Place all ingredients into an ice-ﬁlled shaker, adding the egg white last. Shake vigorously and strain into an ice-ﬁlled rocks glass, garnish with lemon peel and a cocktail cherry. Enjoy!
